Sheep cheese made of raw milk which makes this cheese very special.
When it is elaborated with raw milk, it does not pasteurise totally and this gives the flavour in a more natural and slower way. This process also loses the water slower avoiding strange or rancid flavours.
Time of maturation is 11 months. Elaborated by professionals who have been making this cheese without the use of machines for generations.
This cheese has an intense flavour and is totally different to the spicy or rancid flavour that many old cheeses have. Its texture is very fine and rough. The cut is solid with almost no holes; the few holes are very small and divided in a homogeneous way.
It has a nice fragrance, typical of sheep cheeses.
