It is one of the most ugly fishes in the world , but behind this uglyness hides one of the most exquisite meats. It is acknolege in our gastronomy is recently new.

This fish is about 35-40 cm long and 1,5 or 2 Kg , with big head and big bones, the colour is another of its characteristics aspects, is a bit reddish and yellow, with red stains. Cabracho is a white fish and its meat is delicious and very soft. We can buy it fresh or frozen the whole year.

This fish comes from the Mediterranean Sea, also we find it close to the english coasts and Senegal and of course in the Cantabrian Sea.
