Oricios's caviar becomes elaborated from sea hedgehog's roes
Picked up from the cliffs rocks and the marine funds of the Cantabrian coast, the hedgehog need a special atention.
They are picked out by hand, with alot of care, the roes are packed the way they are found in the shell.
His elaboration is completely craft.
